Boated.com - Boating Safety Course - interesting read
I know this doesn't necessarily pertain to Kayakers - however - it's a 'Boating Safety Course' of which has some very interesting boating, watercraft, and even some kayak information in it. The most interesting information is the Navigation information.

Since we just bought a boat - it was more important for us to get our certification (although, not required). If I would've known about this 6 years ago when we started kayaking, I would've been very interested in reading it.

There are 'study guides' that are FREE and each state has its own cert/studies/etc.
Scroll down and click on 'Study Guides'

Granted - this Certification is not required for kayakers. It's not required for Boaters born before 1982. It IS required for ALL PWC (Personal Watercraft) operators. It's an expensive Certification $44.50 and I haven't really learned the importance of having it yet (since its not required for us at our age) but..... I'm sure it'll look nicer to the 'officer' who comes and questions/inspects your gear!! LOL

Happy Kayaking!
